常用面团

面肥发酵面团
①将老面肥放入容器内。
②加入适量温水。
③再反复调拌均匀成稀糊状。
④然后加入面粉揉匀成酵面后发酵。
⑤碱面放入碗中,加入清水调匀。
⑥在案板上均匀地撒上干面粉。
⑦酵面放在案板上摊开,浇上碱液。
⑧沾抹均匀,折叠好。
⑨双手交叉,用掌跟将面团揉开。
⑩反复几次,至碱液揉匀。
用湿布盖上面团,饧发片刻。
待面团质地光滑,稍有弹性即成。

①将盆内或案板上面粉扒一凹窝,慢慢倒入30℃以下的冷水。
②边倒边搅拌,使面粉呈小面片。
③再加入冷水搅拌成疙瘩状面团,然后用手揉成光滑的面团。
④用湿布盖好,略饧即成。
